Hummus Veggie Sandwich

Hummus & Veggie Sandwich: Try this yummy and invigorating vegetable-stacked sandwich. It’s a great way to start the day, or as a pick-me-up brunch, or even lunch or dinner. Any time of day is a good time to treat yourself and your body to this healthy meal. Creamy hummus, fresh sliced English cucumber, tomato, and curly lettuce on toasted pumpernickel bread make up this quick and easy recipe.

Ingredients:

2-Slices Pumpernickel bread
1/3 Cup Hummus
6-thick slices of English Cucumber (or more)
4-thich slices of red ripe tomatoes ( I love Roma toms for this, but use your favorite)
4-broad leaves of curly lettuce (or more)
OPTIONAL: Drizzle with Olive Oil, Season to taste (I love pepper)

And it’s as easy as it looks! Stack on top of your toasted bread, and serve open-faced.
