This is a really easy vegetable pasta dish…

Vegetable Pasta Ingredients:

  • Any of your favorite vegetables (celery, broccoli, bell peppers, onions, etc.)
  • 1 clove of Garlic
  • 2 – 3 Tomatoes
  • Enough olive oil or butter to barely coat the bottom of your pan
  • Pasta (rigatoni, penne, macaroni – just about any kind like these will work)

Put a little bit of olive oil, or butter, in the bottom of a sauce pan and warm. Add some fresh minced garlic. Add one half of fresh bell pepper (chopped) and some of your favorite veggies — onions and celery. (Celery is really good in this). We also like to add broccoli.

Let those veggies cook a bit, about half way. They should still be a bit firm. Cooking time for your vegetable pasta dish will vary depending on the type of vegetables you choose. (More info on cooking vegetables)

Near the end of the cooking process you’ll add tomatoes. Slice or dice several fresh tomatoes, (or use canned if you prefer) and add them into the cooked vegetable mix. Let it all simmer for another 5 minutes (give or take). Tomatoes cook quickly, which is why you wait until everything is pretty much done before you add them.

Vegetable Pasta Recipe

The second part of making vegetable pasta is, of course, the pasta itself. While you’re cooking the veggies, heat some water to the point of boiling and cook whatever kind of pasta you think is appropriate. I’m using Penne pasta here but other types work very well, too.

Don’t cook the pasta until it turns mushy (read the instructions)… for the best vegetable pasta, your pasta should still be  al dente (slightly firm) when you drain the water. Do not rinse.

Add the drained pasta directly to the veggie mix so everything can all simmer together for a few more minutes before you serve it up.
