This Bacon and Egg Pasta recipe is designed to serve four people.

Each serving includes a portion of the creamy egg noodle and bacon mixture topped with a cooked egg. In general, adjust the quantities accordingly if you need to serve more or fewer people.

Ingredients

  • Egg noodles: 8 ounces (227 grams)
  • Thick-cut bacon: 4 ounces (113 grams), cut into chunks
  • Heavy cream: 1 cup (240 ml)
  • Parmesan cheese: 2 ounces (56 grams), grated
  • Garlic: 2 cloves, minced
  • Olive oil: 1 tablespoon (15 ml)
  • Eggs: 4 large
  • Salt and pepper to taste
  • Fresh parsley: 2 tablespoons, chopped (for garnish)

Instructions

1. Firstly, Cook the Noodles:

Bring a large pot of salted water to a boil. Add egg noodles and cook until al dente. Drain and set aside. (I generally cook the noodles one minute less than package directions. Then finish them in the sauce in step 4. )

2. Next, Cook the Bacon:

In a large skillet, cook the bacon over medium heat until crispy (by all means, go with your preferred doneness). Remove bacon and set aside, leaving the fat in the skillet.

3. Then, Make the Sauce:

In the same skillet, add olive oil and minced garlic. Sauté for a minute. Pour in the heavy cream and bring to a simmer. Add half of the grated Parmesan, stirring until melted. Season with salt and pepper.

4. After that it’s Time to Combine:

Add the cooked noodles to the sauce, tossing to coat evenly. Add the cooked bacon and mix well.

5. Lastly, Cook the Eggs:

In a separate pan, fry the eggs to your preferred doneness.

6. Now, You’re Ready to Assemble and Serve:

Divide the pasta into bowls. Place a cooked egg on top of each. Sprinkle with remaining Parmesan and garnish.

  • First thing to remember is to use quality ingredients for the best flavor.
  • Cook the noodles al dente as they will continue to cook in the sauce.
  • Crisp the bacon well, for that reason it will add a textural contrast.
  • Use low heat when adding the cream to prevent it from curdling.
