Crispy Baked Potato Skins Recipe
Ingredients
- 4 large baking potatoes (about 900g total)
- 2 tablespoons olive oil (30ml)
- 1/2 teaspoon salt (2.5g)
- 1/2 teaspoon black pepper (1g)
- 1/2 teaspoon garlic powder (1g)
- 1 cup shredded cheddar cheese (115g)
- 4 slices bacon, cooked and crumbled (about 112g)
- 3 green onions, sliced (30g)
Instructions
- Preheat & Prepare Potatoes: Preheat the oven to 400°F (200°C). Wash potatoes and pierce them with a fork. Bake directly on the oven rack for about 1 hour or until tender.
- Cool & Slice: Allow potatoes to cool slightly. Cut in half lengthwise and scoop out the flesh, leaving a thin layer of potato. (Save the scooped-out potato for another use.)
- Season: Brush the inside and outside of the potato skins with olive oil. Sprinkle with salt, pepper, and garlic powder.
- Bake Again: Place the skins skin-side up on a baking sheet. Bake for 10 minutes.
- Flip them over and bake for another 5 minutes.
This method ensures that both the skin and the inside of the potato skins get evenly crispy and well-cooked. - Add Toppings: Remove from the oven. Sprinkle with cheese and bacon. Return to the oven and bake until the cheese melts, about 5 minutes.
- Garnish & Serve: Garnish with green onions and serve warm.
Best Tips for Perfection
- Scoop carefully: Leave a thin layer of potato for structural integrity and a bit of fluffy texture.
- Oil well: Ensure skins are well-oiled for crispiness.
- Even baking: Place skins in a single layer on the baking sheet.
