Pancakes with Roasted Oats

National Pancake Week takes place in the last week of February. This year, it takes place from February 20 to 26. It honors one of the favorite breakfast foods in North America — pancakes! [Source]

This recipe for pancakes with roasted oats (plus), is sure to be a hit. The roasted oats give the pancakes an extra crunchy texture while the bananas add sweetness without being overly sugary. Plus, this recipe is easy to make using ingredients that are probably already in your pantry! So what are you waiting for? Let’s get cooking!

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 large egg, lightly beaten
  • 1 cup milk
  • 2 tablespoons melted butter or oil
  • Old fashioned rolled or steel cut oats – roasted*
  • Dark Chocolate chips – optional

Instructions:

(Makes 8 or more pancakes depending on thickness.)

1. In a medium bowl, combine the all-purpose flour, sugar, baking powder, ground cinnamon and salt. Whisk until the ingredients are fully combined.

2. In a separate bowl or jug, whisk together the egg and milk until incorporated. Then add the melted butter or oil and mix until combined.

3. Pour the wet ingredients into the dry ingredients and mix until combined, but do not over mix!

4. Preheat a large skillet or griddle over medium heat. When hot, add a tablespoon of butter or oil to coat the bottom of the pan.

5. Scoop 1/8 to 1/4 cup (depending on desired thickness) of the pancake batter onto the skillet and spread it into a round shape. NOTE: If you find that the batter is too thick, add a tablespoon of milk at a time and mix until you get your desired consistency.

6. Cook for 1-2 minutes before flipping, or until small bubbles form on top and the pancakes are golden brown on the bottom. Flip and cook for another 1-2 minutes until the other side is golden brown.

* How to roast oats

Preheat your oven to 350°F. Spread the oats on a baking sheet in an even layer and bake for 5-10 minutes until lightly golden brown. Stir the oats occasionally while roasting so they cook evenly. When done, remove from oven and let cool.

To Serve Pancakes with Roasted Oats (plus):

Optional: Sprinkle dark chocolate chips over hot pancakes (or partially melt on stove top or microwave).

Top with banana slices and then 2 tablespoons of the roasted oats to each pancake. The oats give the dish an extra crunchy texture and nutty flavor!
