Let’s talk beef tips…

Today’s recipe is Steak and Potatoes where beef tips are cooked in a deliciously rich savory sauce along with tomatoes, and asparagus. We’re serving this dinner with “amped up” mashed potatoes.

Now, doesn’t this look absolutely mouth-watering?… It is!

First, I thought I’d offer some general information about beef cuts and cooking tips. (Or jump to the recipe here.)

Since we’re on the subject of steak and potatoes, let’s talk about cuts.

What is the tenderest beef?

  • One of the tastiest and most popular cuts is the filet mignon, which comes from the tenderloin, a part of the cow that doesn’t get much use.

  • And if you’re looking for something a little different, the hanger steak, which hangs from the diaphragm of the cow, is also incredibly tender and flavorful.

When it comes to slow-cooking cooking beef, such as in a sauce, choosing the right type of meat can make all the difference.

  • Other cuts that work well include short ribs, flank steak, and skirt steak.

What is the best beef to use for sauce-based recipes?

For example, there’s the flat iron steak, which is known for its tenderness and delicious flavor. Or there’s the flank steak, also tender and flavorful. And let’s not forget about the tri-tip, which is a very versatile cut.

When should I sear beef?

Cooking beef can be a bit tricky, especially when it comes to making delicious beef tips. One question that many people have is whether or not it’s important to brown (sear) the beef before adding it in a sauce or stew.

The answer is a resounding yes!

Searing the beef creates a crust on the outside of the meat that not only adds flavor but also helps to keep the juices and flavors inside the meat. This results in a richer, more intense beef flavor that will truly impress your taste buds.

The Featured Steak and Potatoes Recipe

These beef tips in a savory sauce with tomato and asparagus is so delicious that your taste buds will want it again and again. You don’t need to be a seasoned cook to recreate this dish. So, let’s get cooking!

Ingredients:

  • 2 lbs beef sirloin, cut into pieces
  • 2 tablespoons of olive oil or butter
  • 2 cloves garlic, minced of chopped
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon Italian seasoning blend (thyme, oregano and basil)
  • Salt to taste
  • 1/2 cup beef broth
  • 4-5 tomatoes, halved
  • 1 cup asparagus, cut into pieces
  • Amped up mashed potatoes (see below)

Instructions:

  1. Heat the oil over medium heat in a large skillet or Dutch oven. Add the beef cubes and cook until they are seared.
  2. Add the garlic, pepper, Italian seasoning blend and salt to the beef cubes and cook until fragrant, about 1 minute.
  3. To prepare fresh tomatoes for this recipe, you will need to start by washing and drying them. Then cut them in halves. Depending on the size of your beef sirloin, you will need about 4-5 medium-sized fresh tomatoes. Set them aside.
  4. Pour the broth into the skillet and bring to a boil.
  5. Reduce heat to medium-low and simmer for 10-20 minutes* until the beef is cooked through and tender.
    *Timing will depend on size, thickness and type of beef. Some will take longer.
  6. When the beef is ready, add your prepped tomatoes. The tomatoes will help create a flavorful base for this delicious recipe.
  7. And add the asparagus pieces and cook for an additional 5 minutes.
  8. Serve hot with mashed potatoes (see below).

“Amped up” mashed potatoes

  1. Start by peeling and chopping 4-5 large potatoes. Cut them into cubes as equal in size as possible and add to a pot of boiling water.
  2. Boil the potatoes for 10-15 minutes or until they are fork tender. (The size of the cubes make a difference.)
  3. Then drain the potatoes in a colander and return back to the pot.
  4. Mash the potatoes with a potato masher until they reach your desired consistency.
  5. For the amped up extra creamy texture, add 1/2 cup of sour cream.
  6. Add butter, salt and pepper to taste.
  7. Adjust seasonings as needed and serve.

Servings:

This recipe will serve 4 people depending on appetites.

Any leftovers can be stored in the fridge for 3-4 days and reheated for another night’s meal.

Tips:

To top this dish, you can choose from a variety of herbs to add some color and flavor.

Some great garnish ideas are chives, parsley, basil, oregano or thyme.

You could even make a mixture of these herbs to sprinkle over the beef tips for an extra flavorful touch!

If you like, you can also add some freshly grated Parmesan cheese to the top for a delicious finishing touch.
