Here’s how I make my favorite one!

Ingredients per sandwich:

(*depending on size):

  • 1 bagel (of your choice) top and bottom
  • 1 pat of butter
  • 2 Tbsp cream cheese (1 per side)
  • 1 – 3 tomato slices* (per side)
  • 4 cucumber slices* (per side)
  • 4 avocado slices* (per side)
  • Spinach leaves (as many as you want)
  • Shredded cheese (to your liking)
  • Pepper (to taste)
  • Salt (if needed)

Tip: I serve it with a side salad using the “extra” veggies for a double whammy of nutrition.

Instructions:

1. Lightly butter your bagel.

2. Put it your oven under a low broil setting for around 3-4 minutes, until golden brown.

3. Once cooled enough to touch, smear on the cream cheese.

4. I like to put the spinach next.

5. Then the avocado, cucumbers, tomato and top with grated cheese. (Or avocado on the side since it’s so slippery!)

And, as you may have guessed by now, nearly everything (except desserts) gets a topping of pepper!

Note: You could put it back under the broiler for a minute if you prefer your cheese melted, but I like it just the way it is. (Btw, I usually use a pre-shredded “Italian 6-cheese blend.” Though any cheese is excellent on this.)

Sure, eating this delicious bagel sandwich can be completely satisfying. But with its added slipperiness and sloppiness to the mix, things could get a little tricky. (Especially if others are around!)
